TUSCAN SAUSAGE PASTA
INGREDIENTS
- 400g Italian sausage, uncased
- 3 garlic cloves, minced
- 1 small onion, chopped
- 200g cherry tomatoes (halved)
- 100ml cream
- 100g baby spinach
- 300g short pasta
- 2 tbsp olive oil
- Dried herbs (parsley/oregano/basil)
- Grated Parmesan (to serve)
INSTRUCTIONS
Cook pasta and set aside.Heat olive oil in a large pan over medium heat.
Add onion and garlic, sauté until softened.Add uncased sausage, breaking it up with a spoon, and cook until browned and cooked through.Stir in cherry tomatoes and dried herbs and cook for 5 minutes until they soften.Pour in cream and bring to a simmer.Add spinach and cook until wilted.Toss cooked pasta into the sauce and mix well.Serve topped with parmesan.
