TUSCAN SAUSAGE PASTA

 
     INGREDIENTS

  1. 400g Italian sausage, uncased 
  2. 3 garlic cloves, minced
  3. 1 small onion, chopped
  4. 200g cherry tomatoes (halved)
  5. 100ml cream
  6. 100g baby spinach
  7. 300g short pasta
  8. 2 tbsp olive oil
  9. Dried herbs (parsley/oregano/basil)
  10. Grated Parmesan (to serve)
INSTRUCTIONS

  • Cook pasta and set aside.
  • Heat olive oil in a large pan over medium heat.
  • Add onion and garlic, sauté until softened.
  • Add uncased sausage, breaking it up with a spoon, and cook until browned and cooked through.
  • Stir in cherry tomatoes and dried herbs and cook for 5 minutes until they soften.
  • Pour in cream and bring to a simmer.
  • Add spinach and cook until wilted.
  • Toss cooked pasta into the sauce and mix well.
  • Serve topped with parmesan.
