CINNAMON LOAF



INGREDIENTS

  1. 250g plain flour
  2. 100g sugar
  3. 100g icing sugar
  4. 240ml milk
  5. 60ml vegetable oil
  6. 1 tbsp ground cinnamon (for cinnamon swirl)
  7. 1 tsp baking powder
  8. 1 tsp ground cinnamon
  9. 1 egg
  10. 1 tsp vanilla extract
INSTRUCTIONS

  • Preheat the oven to 180°C. Line a loaf tin with baking paper.
  • In a bowl, whisk together flour, baking powder, cinnamon, and sugar.
  • In another bowl, beat the egg with milk, oil, and vanilla extract.
  • Pour the wet ingredients into the dry and mix until combined.
  • In a small bowl, combine brown sugar and cinnamon for the swirl.
  • Pour half the batter into the loaf tin. Sprinkle half the cinnamon sugar mixture over it.
  • Add the remaining batter on top, then sprinkle the rest of the cinnamon sugar.
  • Bake for 45–50 minutes until a toothpick inserted in the centre comes out clean.
  • Let cool before slicing.
