CINNAMON LOAF
INGREDIENTS
- 250g plain flour
- 100g sugar
- 100g icing sugar
- 240ml milk
- 60ml vegetable oil
- 1 tbsp ground cinnamon (for cinnamon swirl)
- 1 tsp baking powder
- 1 tsp ground cinnamon
- 1 egg
- 1 tsp vanilla extract
INSTRUCTIONS
Preheat the oven to 180°C. Line a loaf tin with baking paper.In a bowl, whisk together flour, baking powder, cinnamon, and sugar.In another bowl, beat the egg with milk, oil, and vanilla extract.Pour the wet ingredients into the dry and mix until combined.In a small bowl, combine brown sugar and cinnamon for the swirl.Pour half the batter into the loaf tin. Sprinkle half the cinnamon sugar mixture over it.Add the remaining batter on top, then sprinkle the rest of the cinnamon sugar.Bake for 45–50 minutes until a toothpick inserted in the centre comes out clean.Let cool before slicing.
