HAINANESE CHICKEN RICE

 
     INGREDIENTS

  1. 4 chicken thighs
  2. 1 thumb of ginger 
  3. 3 garlic cloves
  4. Spring onion
  5. 150g rice
  6. Cucumber

CHILLI SAUCE
  1. Sriracha
  2. 1 garlic clove
  3. Rice vinegar
  4. Honey

SOY DIP
  1. Light soy sauce
  2. Sesame oil


INSTRUCTIONS

  • Place chicken thighs in a pot with ginger slices, 2 garlic cloves (smashed), and the white of the spring onion.
  • Cover with water and bring to a boil, then reduce to a gentle simmer for 20–25 minutes, until the chicken is fully cooked.
  • Remove the chicken and reserve the broth for cooking rice.
  • In a pot or rice cooker, cook the rice using the reserved chicken broth. 
  • For the chilli sauce, mix 1 tbsp sriracha with the minced garlic, rice vinegar, and a small squeeze of honey. 
  • For the soy dip, mix 2 tbsp light soy sauce with a few drops of sesame oil. 
  • Slice the cooked chicken and serve over the rice with cucumber on the side.
