HAINANESE CHICKEN RICE
INGREDIENTS
- 4 chicken thighs
- 1 thumb of ginger
- 3 garlic cloves
- Spring onion
- 150g rice
- Cucumber
CHILLI SAUCE

INSTRUCTIONS
Place chicken thighs in a pot with
ginger slices, 2 garlic cloves (smashed), and the white of the spring onion.Cover with water and bring to a boil, then reduce to a gentle simmer for 20–25 minutes, until the chicken is fully cooked.Remove the chicken and reserve the broth for cooking rice.In a pot or rice cooker, cook the rice using the reserved chicken broth. For the chilli sauce, mix 1 tbsp sriracha with the minced garlic, rice vinegar, and a small squeeze of honey. For the soy dip, mix 2 tbsp light soy sauce with a few drops of sesame oil. Slice the cooked chicken and serve over the rice with cucumber on the side.
